In December, as the cold deepens, the soul yearns for warm dishes and a sake to match. Following traditional techniques passed down through generations, we handle the new rice with the same tender care as a newborn baby to brew this batch. This is our "First Release"—a freshly born, slightly cloudy new sake. Please enjoy it well-chilled. You will experience a gorgeous aroma reminiscent of fresh fruit juice, followed by a rich, expansive umami.

Junmai Nama Genshu

This is our first new Junmai-shu release of the year. Since it is brewed using only rice and water, it is the ultimate showcase of the master brewer’s (Toji) skill. We bottle this sake without any heat treatment or dilution, preserving its raw, natural form. It boasts an exceptional, full-bodied flavor so smooth you might forget its high 18% alcohol content. With an even richer aroma reminiscent of fruit and a deep, luscious umami, this brew stands out as a truly exquisite masterpiece.

Honjozo Genshu: Yaotome

During the Edo period, there was a type of sake called "Hashira Shochu," which was balanced with distilled spirits. This traditional technique is recorded in the ancient archives of the "Hideyoshi" brewery and is remarkably similar to modern-day Honjozo brewing. Inheriting this legacy, "Yaotome" is an exclusive, limited-edition product, prepared only once a year for our Brewery Open House and available solely to those who have pre-ordered. It features a rich and gorgeous aroma, a satisfyingly bold character, and a smooth finish—a truly fragrant and flavorful masterpiece.
